Unroll the puff pastry sheets so that they're flat. Divide the sausage in half and gently press each half flat onto each sheet of puff pastry, leaving a 1/2-inch border on one side. Roll the opposite side towards the one that you left the border on, creating a log and pinch the dough end together to seal. Wrap each roll in a sheet of plastic and refrigerate overnight.

Preheat oven to 400 F. Line two baking sheets with parchment paper.

Unwrap the rolls and put them onto a cutting board. Using a sharp knife, slice into 1/2-inch circles. Place each circle, sliced-side-down on the prepared baking sheets. Bake at 400 F for 20-25 minutes until the dough is golden and the sausage and dough are cooked all the way through. Serve hot!
