In a large bowl, mix together butter, vanilla, flour, oats, 1/2 cup sugar, baking powder, lemon zest and salt. When combined divide mixture in half and press into the bottom of an 8x8 baking pan. Set aside.

Preheat oven to 375 F.

Using a food processor, pulse together cranberries and remaining 2 tablespoons of sugar until finely minced. Place in a small saucepan with water. Bring to boil over medium heat and stir and heat until it's reduce to a paste. Then add in cornstarch, stir and allow it to boil and thicken. Once thickened, remove from heat and press the mixture into a bowl through a sieve to remove any extra skin and pith left behind. Let the smooth cranberry jelly cool slightly. Then spread it evenly over the oat mixture that has been pressed into the bottom of the baking pan.

Crumble remaining oat mixture over the top of the cranberries. Bake for 20-25 minutes, or until golden brown. Remove from oven and cool on wire rack. Slice and serve at room temp. Devour.
