Cranberry-citrus Glazed Pork

   In a small bowl, combine salt, pepper, and 1/4 teaspoon sage; rub over all sides of pork roast.

   Place roast on a rack in a shallow roasting pan.

   Roast, uncovered, in a 325 degrees oven for 1 hour.

   For sauce, in a saucepan, combine cranberry sauce, orange peel, orange juice, and 1/4 teaspoon sage.

   Bring to boiling; reduce heat.

   Simmer, uncovered, about 10 minutes or until mixture has thickened slightly.

   Spoon about 1/4 cup sauce over pork.

   Roast meat, uncovered, 30 to 45 minutes more or until meat thermometer inserted in center of roast registers 155 degrees .

   Remove from oven.

    Cover loosely with foil; let stand 15 minutes.

    The temperature of the meat will rise 5 degrees during standing.

    Serve remaining sauce with meat.
