1 ½ cups water
¾ cup orange juice, divided
⅓ cup raisins
½ teaspoon salt
½ teaspoon fresh ground black pepper
6 tablespoons olive oil
1 cup shredded carrots or 1 cup julienned carrot
⅓ cup chopped walnuts, toasted
1 12 lbs cooked turkey breast, cut into thin strips (deli turkey)
3 cups Baby Spinach

In a medium saucepan, bring lightly salted water to a boil.

Cover the pan, then remove from heat and let stand for 5 minutes until the liquid is absorbed.
