1/2 cup all-purpose flour
2 tbsp olive oil
3 None Spanish onion, halved
2 cloves garlic, minced
2 slices bacon, coarsely chopped
2 tbsp tomato paste
3 cups beef stock
1 (15 oz) can crushed tomatoes
1/4 cup Worcestershire sauce
2 None potatoes, coarsely chopped
1 None sweet potato, coarsely chopped
1 None red pepper, coarsely chopped
1 tbsp coarsely chopped fresh thyme leaves

Coat beef in flour, shaking off excess. Heat oil in a large saucepan over medium-high heat. Working in batches, cook beef until browned. Remove from pan.

Add onion, garlic and bacon to pan and cook until bacon is crispy. Add tomato paste and cook, stirring, for 1 min.

Return beef to pan along with stock, tomatoes and Worcestershire sauce. Bring to a boil. Reduce heat and simmer, covered, for 1 hour, stirring occasionally.

Add potatoes, sweet potato and pepper to pan. Simmer, uncovered, stirring occasionally, for 30 mins, or until beef is tender. Season to taste. Serve sprinkled with thyme.
