Company Carrots – a delicious recipe with carrots, mayo, onion, horseradish, salt, liquid. Easy to follow and perfect for any occasion.

2 lb. carrots, julienne
1/2 c. mayo
1 Tbsp. minced onion
1 Tbsp. horseradish
salt and pepper to tate
1/4 c. reserved cooking liquid
1/4 c. finely crushed saltines
2 Tbsp. butter
chopped parsley
paprika

Cook carrots until tender, about 15 to 20 minutes. Cook, covered, in small amount of boiling salted water. Drain carrots, reserving 1/4 cup liquid. Place carrots in 8 x 12 shallow baking dish. Combine cooking liquid, mayo, onion, horseradish, salt and pepper. When ready to serve, pour sauce over carrots. Sprinkle crumbs on top. Dot with butter, parsley and paprika. Bake 20 minutes at 350u00b0. Great served with beef tenderloin.
