Colette'S Sausage Stuffed Mushrooms

   Remove stems from mushrooms and set aside.

   Rinse mushrooms and place on baking sheet

   Take stems, 1/2 cup of onions and about 3 garlic cloves and chop finely. Set aside.

   Brown sausage in frying pan. Cool sausage a bit and chop finely. Set aside.

   Take chopped stems, onions and garlic and saute' in frying pan with some oil.

   Place sausage, and stem mixture into a mixing bowl with about a half cup of grated cheese. Mix.

   Melt butter in microwave, save some for the last step of baking.

   Add bread crumbs and butter a little at a time to stem/sausage mixture until it is holding together like a good stuffing. If your mixture is too wet add more breadcrumbs, if too dry, more butter.

   Stuff mushroom cap with mixture and bake on baking sheet at 350 degrees for about 20 minutes or until mushrooms are cooked fully.

    When there are 5 minutes left, take some of the leftover melted butter and mix some grated cheese with it and use a spoon to drop some on top of each mushroom and continue baking the last 5 minutes.

    You will most likely have leftover stuffing mix. Use for a side or stuff chicken breast etc with it!
