Preheat oven to 350F. Grease and line an 7 x 11 inch Swiss roll pan. Blend the prunes and 3 tbsp boiling water in a food processor until almost smooth.

Place the prune puree in a bowl with the eggs, sugar and flour. Beat until well blended. Place the instant coffee granules in a bowl and add 1 tbsp boiling water and stir to dissolve. Add to the brownie mixture and stir well. Spoon into pan and bake for 20-25 mins until springy to the touch. Leave to cool in pan.

To make the icing, sift the powdered sugar into a bowl. Place the coffee granules in a small bowl and add 2 tbsp boiling water and stir to form a smooth icing. Add to the powdered sugar and stir. Spread over the brownies. Cut into 12 slices. Decorate with sugar crystals.
