Coconut Icebox Cookies

   Combine eggs, sugar, shortening, and coconut in a large mixing bowl; mix well.

   Sift together flour, baking powder, and salt. Add to egg mixture, stirring well.

   Press dough into a waxed paper-lined 8-inch square baking pan; cover and refrigerate overnight.

   Turn dough out of pan, and remove waxed paper. Slice dough in half, forming two 8- x 4-inch rectangles. Cut each portion crosswise into 1/4-inch slices. Place on ungreased cookie sheets; bake at 400u00b0 for 10 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks.
