Preheat oven to 400 degrees.

First put the flax seed in a coffee grinder or food processor and grind until fine. Mix with water and let sit about 5 minutes in a medium mixing bowl until thick. This replaces 2 eggs in this recipe. You can use preground flax seed meal, but fresh is so much better for you!

Mix dry ingredients in bowl and set aside.

Add sugar and applesauce to melted butter and let sit a minute if using raw sugar to partially dissolve. Add this to the flax seed (or eggs) and mix well. Stir in flour mixture until moist then add chopped apples.

Fill paper lined muffin pan 3/4 full.

Sprinkle 1/4 tsp of topping on each muffin.
