Christmas Tree Spice Cookies

   In a bowl, mix together the almond powder, the sugar, mandarin zest, and the bitter almond extract.

   Beat the egg whites until stiff and fold gently into the mixture above.

   Cover with a plastic film and refrigerate for 3 hours.

   Preheat oven at 150 degrees Celsius.

   Form little balls, and roll them in granulated sugar .

   Place them on a baking tray covered with parchment paper. Space them out a little, put a whole almond in the center, slightly flattening the amaretti.

   Cook them for 10-15 minutes.

   They should not be colored and remain soft in the center, only cracks will appear on the sides.

   Let them cool down for 4/5 minutes before putting them on a grid.
