Christmas Cookies With Vanilla & Cardamom

   Preheat oven to 180 degrees Celsius.

   Mix soft butter until creamy.

   Add sugar, salt, vanilla extract, ground vanilla, and cardamom and stir everything together with a spatula. Once creamy, add the egg yolks, continue stirring. Add the flour gradually and mix until the dough takes shape. Finish mixing by hand.

   Form a ball of dough and refrigerate for 30 minutes.

   On a floured surface, roll out the dough to 5-6 millimeters thick.

   Cut out small pieces of dough with a fluted pastry cutter.

   Place the cookies on a baking sheet lined with parchment paper, and bake for 14 minutes or a little less for softer cookies.

   Cool on a biscuit grill.
