Christmas Brittle

   Grease 2 cookie sheets and keep warm in 200u00b0 oven.

   In large saucepan, combine the sugar, corn syrup and 1 cup water.

   Cook over medium heat, stirring constantly, until a candy thermometer reaches 240u00b0 (soft ball stage).

   Stir in butter, salt and peanuts.

   Keep cooking, stirring constantly, until mixture reaches 300u00b0.

   Combine soda, 1 teaspoon water and vanilla.

   Remove saucepan from heat; stir in soda mixture.

   Quickly spread half of mixture in each pan. Spread with a spatula 1/4-inch thick.

   Cool and break into pieces. Yields about 2 1/2 pounds.
