Preheat oven to 400F

Place butter,water,sugar and salt in saucepan bring to boil. Take pan off heat and dump in flour. Stir with wooden spoon until incorporated. Return pan to medium low heat and stir about 30sec until dough comes away from the pan. Scoop dough into bowl and cool for 5 min. Stir in one egg at a time until each egg is absorbed. Thick and sticky dough.

Scoop dough into pastry bag and make Tbsp sized drops onto parchment lined cookie sheet. Brush lightly with cream and sprinkle heavily with pearl sugar.

Bake 10min at 400F, then reduce heat to 350f for 20min. They should be puffed and medium golden. Cool on rack.

Can be drizzled with honey/chocolate, filled with whipped cream, made savory with shredded cheese/chives
