Make one day in advance!

Line bottom of spring-form pan with wax paper (trace pan bottom onto wax paper; cut and fit into pan bottom).

Melt chocolate morsels and 6 tablespoons water in double boiler.

Add sugar.

Remove from heat.

Add 6 egg yolks.

Beat egg whites until stiff.

Fold into chocolate mixture.

Beat 1 pint heavy cream, adding vanilla.

Line bottom and sides of pan with ladyfingers (there will be a couple of leftover ones) to form picket fence. Chill overnight.

Two hours before serving, beat 1/2 pint heavy cream with 2 tablespoons sugar.

Pour over mousse, then sprinkle with chocolate sprinkles immediately before serving.
