Preheat the oven to 350u00b0F. Lightly grease and line 2 baking pans with parchment paper. Roll dough between sheets of parchment paper until 1/4-inch thick. Using 1 1/4-inch round cookie cutter, cut rounds from dough. Place rounds about 1 inch apart on prepared pans.

Bake for about 10 mins. Immediately place 1 chocolate mint on top of each cookie, pressing down lightly. Cool in pan 2 mins. Remove from pan; cool completely on wire rack.
