Chocolate Chip Mint Meringues Recipe

   Line a large baking sheet with a double thickness of waxed paper.

   Set aside.

   Preheat oven to 350 degrees.

   In a large mixing bowl, beat egg whites and vinegar till foamy.

   Add in sugar, 1 Tbsp.

   Beat till stiff peaks from (very stiff).

   Blend in food coloring.

   Mix in mint chips.

    Drop meringue by teaspoonfuls onto waxed paper.

    Place baking sheet in oven, turn off heat.

    Let stand in oven overnight.

    Store in a cold dry place.
