Make your cookie dough (or you could easily use a premade, store-bought cookie dough). Scoop into teaspoon-sized balls and place in the freezer in a Ziplock bag or airtight container. Your cookie dough has to be completely frozen so you could always make it the night before as well!

Preheat oven to 350.

Whisk flour, baking powder and salt.

Beat butter until smooth and add sugar beating until light and fluffy. Add eggs one at a time, beating until combined each time. Mix in the flour mixture, alternating with milk and vanilla, beginning and ending with flour.

Using an ice cream scoop, scoop batter into prepared cupcake pan. Get cookie dough balls out of the fridge and place into the cupcake, pushing down into center of batter.

Bake for 20 minutes.

Transfer to cooling rack. Once cool top with your favorite chocolate icing!
