Preheat your oven to 180 degrees celsius.

Sift the flour and 30g of cocoa into a bowl.

Place 6 egg whites in the bowl of an electric mixer and beat until soft peaks form.

Add 2 tablespoons from 185g of castor sugar and continue beating until the egg whites are quite stiff.

Fold in remaining castor sugar,flour and cocoa powder.

Grease a muffin tray well with butter,and fill 2/3 full with the mixture.

Bake for 20-25 min .

Cool slightly and carefully turn out onto a wire rack to cool.

Place icing sugarb in a bowl and add some warm water,a tablespoon at a time,until you have a soft icing.

Drizzle the tops of the cakes with the icing,allowing it to drip on the sides.

Quarter 1/2 cup worth of cherries and use to decorate the cakes.
