For the burgers:
-
2
In a medium-sized saute pan, heat 2 tablespoons of olive oil over medium heat.
-
3
Add jalapeno, red pepper, onion and garlic.
-
4
Season with salt and pepper.
-
5
Saute for 4 minutes, just until the veggies soften slightly.
-
6
They will cook the rest of the way in the burger.
-
7
Take off heat and set aside for a few minutes.
-
8
In a large bowl, add the ground turkey, chipotle in adobo, cayenne, coriander, cumin, chili powder, Worcestershire sauce, Tabasco, and salt and pepper to taste.
-
9
Add the veggies and grated cheese.
-
10
Mix until combined and then form the mixture into patties.
-
11
I usually get about 6 burgers.
-
12
Fire up the grill or heat a cast iron pan over medium high heat.
-
13
Cook for 4-5 minutes on each side.
-
14
If you are feeling fancy, toast the burger buns.
-
15
Top burgers with tomato, lettuce, and a generous amount of guacamole.
-
16
Enjoy!

17
For the guacamole:
-
18
Use a knife to cut around the seed of your avocados and pull the halves apart.
-
19
Remove the seed.
-
20
Using a spoon, scoop out the inside of the avocados and place them in a large bowl.
-
21
Start with 1 teaspoon of salt and 1/2 teaspoon of pepper and add it to your avocados.
-
22
You may need more salt, but make sure you taste it first before adding more and over salting the dish.
-
23
Avocados tend to need a healthy helping of salt.
-
24
Add the lemon juice and Tabasco.
-
25
Smash the avocado mixture until it becomes creamy but still remains slightly chunky.
-
26
I use a pastry cutter, but a fork will work just fine.
-
27
Add the minced garlic, onion and jalapeno to the avocado mixture and stir.
-
28
Make sure you taste the mixture to see if it needs more salt, pepper or Tabasco.
-
29
Refrigerate until youre ready to eat it.
