1
For the honey Dijon sauce: In a small bowl, add the mayonnaise, Dijon mustard and honey.
-
2
Mix together and set aside for a moment.
-
3
For the sliders: Cut each chicken breast into 4 equally-sized pieces and add them to a medium size bowl.
-
4
Then add the Chipotle powder, pepper, and salt.
-
5
Coat the pieces of chicken with the spices on all sides.
-
6
Add the flour to a separate small bowl and coat each piece of chicken with the flour.
-
7
Set aside for a moment.
-
8
In a medium size skillet, add the canola oil and heat on medium heat.
-
9
Add a pinch of flour to the oil and when it bubbles, add the pieces of chicken to the pan.
-
10
When the bottom side of the chicken turns a golden color (about 3 or 4 minutes) turn the chicken over.
-
11
Continue to turn the chicken as it cooks until all sides of the chicken are a golden color (about 4 or 5 more minutes).
-
12
If the chicken is browning too quickly, turn the heat down just a bit.
-
13
Remove the chicken from the pan and set it on a small rack to drain the excess oil.
-
14
Partially cut the rolls in half from side to side leaving a small section uncut so it resembles a hot dog bun.
-
15
Drizzle the honey Dijon sauce inside each roll.
-
16
Then add a fried chicken nugget to each bun, and drizzle more honey Dijon sauce on top of the chicken.
-
17
Garnish with the chives and serve with the uncut side of the bun down (like a mini hot dog).
