For the marinade, mix the soy sauce, sugar, tomato paste and oil in a large bowl and season. Place the chicken pieces, a few at a time, in a large resealable plastic bag. Pound with a rolling pin until they are about 1/4-inch thick. Add the chicken pieces to the marinade and turn to coat well. Cover and refrigerate for 2 hours to marinate.

Preheat the oven to 400u00b0F. Line a baking pan with parchment paper. Place the chicken pieces in a single layer on the pan. Bake for about 20 mins or until chicken is cooked through.

Cook the rice in boiling, salted water according to package directions. Meanwhile, beat the eggs in a medium bowl. Season with salt, pepper and nutmeg. When the rice is cooked, drain and return to the warm pan. Briskly stir in the eggs.
