Ingredients: 1 1/2 lb chicken breast; 1 whole green onion; 1 quarter size slice ginger; 1 Tbls dry sherry; 1/2 tsp salt and sugar; 2 c water; 3 cups shredded lettuce (any lettuce can be used but suggest mix of arugula & cabbage); Peanut Sauce:; 3 Tbls peanut butter; 5 Tbls salad oil; 4 Tbls soy sauce; 4 Tbls sugar; 4 tsp white vinegar; 1 tsp sesame oil; 1/4 - 1/2 tsp cayenne pepper; 2 Tbls minced green onion; 2 Tbls cilantro

1 1/2 lb chicken breast
1 whole green onion
1 quarter size slice ginger
1 Tbls dry sherry
1/2 tsp salt and sugar
2 c water
3 cups shredded lettuce (any lettuce can be used but suggest mix of arugula & cabbage)
Peanut Sauce:
3 Tbls peanut butter
5 Tbls salad oil
4 Tbls soy sauce
4 Tbls sugar
4 tsp white vinegar
1 tsp sesame oil
1/4 - 1/2 tsp cayenne pepper
2 Tbls minced green onion
2 Tbls cilantro

Chicken:

Place chicken in 2 quart pan with onion, ginger, sherry, salt, sugar and water. Bring to a boil, then cover and simmer for 20 minutes. Remove and let cool until it is cool enough to handle (save broth for a soup). Shred meat in long shreds.

Stir together peanut butter and salad oil until well mixed and looks creamy. Add soy sauce, sugar, vinegar, sesame oil and cayenne pepper. Gently fold in green onions and cilantro.

Arrange shredded chicken over lettuce and dress with peanut sauce. Serve and enjoy.
