Preheat BBQ grill to high heat

Rub the chicken breast with oil and cook 4 to 5 min per side, or until done.

salt and pepper chicken lightly on both sides while it cooks.

set chicken aside for awhile until it is cool enough to handle.

Preheat 1 tablespoon of vegetable oil in a medium sized skillet over med-high heat.

Add the red pepper and onion to the pan and cook until tender

add the corn, black beans, spinach, jalapenos, parsley, cumin, chili powder, salt and cayenne pepper to the pan.

stir well so that the spinach separates and incorporates well

remove the pan from the heat and add cheese

stir until the chesse is melted

wrap the tortilla in a moist cloth and microwave on high 30sec or until hot.

spoon 1/5th of the mixture into center of tortilla

fold in the ends and roll up tortilla

roll tortilla up tight and then pierce with a toothpick to keep it together.

repeat with remaining ingredients until you have 5 tortillas.

arrange the tortillas on a plate and cover with plastic wrap and freeze for 4hrs, overnight is best

while the tortillas freeze make the dipping sauce by combining all ingredients in a bowl.

preheat 4 to 6 cups of oil to 375F

deep fry in oil for 5 to 6 minutes and remove to paper towels or rack to drain about 2 min.
