1 tbsp flaked sea salt
2 tsp black cracked pepper
1 tsp lime zest
1/2 tsp sugar
2 tbsp peanut oil
1 None onion, cut into wedges
2 oz bean sprouts
3/4 inch fresh ginger, peeled, finely sliced

Combine soy sauce, wine, cornstarch and 1 tbsp water, stirring until smooth. Add beef and toss to coat. Cover and chill for 30 mins.

Meanwhile, to make the spicy seasoning, dry toast chili flakes, salt and pepper over medium heat for 2-3 mins, until fragrant. Transfer to a mortar and pestle and pound with lime zest and sugar. Set aside.

Working in batches, heat 1 tbsp oil in a wok. Stir-fry beef for 1-2 mins, until browned. Set aside. Add remaining oil and stir-fry onion for 1-2 mins, until just softened. Add bean sprouts and ginger. Stir-fry for 30 seconds, until fragrant. Return beef to pan and stir-fry for 1 min, until warmed through. Sprinkle spicy seasoning over top. Serve.
