Ingredients: 1 lb chicken breast, boneless, skinless; ½ teaspoon dried thyme leaves; ⅛ teaspoon fresh ground pepper, more to taste; 1 ½ tablespoons butter, no transfat spread like Promise; 1 medium onion, chopped fine; 3 garlic cloves, minced; 1 ½ cups chicken broth, low-fat, low sodium; ¼ cup dry white wine; 1 (16 ounce) can cannellini beans, rinsed and drained; 1 (10 ounce) bag Baby Spinach

Servings: persons

1 lb chicken breast, boneless, skinless
½ teaspoon dried thyme leaves
⅛ teaspoon fresh ground pepper, more to taste
1 ½ tablespoons butter, no transfat spread like Promise
1 medium onion, chopped fine
3 garlic cloves, minced
1 ½ cups chicken broth, low-fat, low sodium
¼ cup dry white wine
1 (16 ounce) can cannellini beans, rinsed and drained
1 (10 ounce) bag Baby Spinach

Cut chicken breasts into strips and season with thyme and black pepper.

Melt 1 tablespoons butter in skillet over medium high heat.

Add chicken to the butter and brown over medium high heat about 3 - 4 minutes.

Move chicken to side and add 1/2 tablespoons of butter.

Add minced garlic and onion (note I use onion powder only because my DH can't eat real onions - I know how awful to not cook with real onions).

Saute 1 minute and then add broth and white wine.

I used Pinot Grigio because that's what I had on hand.

Bring to a boil and reduce heat - simmer 5 minutes.

Stir in beans which have been rinsed and drained and the spinach leaves.

Simmer 5 more minutes until chicken cooked through.
