Chicken Toasts

   Toast the bread slices.

   Grease a deep, wide skillet with cooking spray, and add the onion and green bell pepper. Let them cook on medium until the onion browns.

   Add the chicken and carrot to the skillet, and cook for 2 minutes.

   Add the BBQ sauce and stir occasionally until all the ingredients are completely mixed.

   Turn off the stove and cover the toast with the chicken and vegetables.

   Sprinkle with oaxaca cheese.

   Grill the toasts in the oven until the cheese melts and serve.
