1/4 c. butter
1 tbsp. onion, grated
1/4 c. flour
1 c. skim lowfat milk
1-2 c. finely minced celery
2 tbsp. finely minced parsley
1 egg, beaten
1/2 c. cool cooked rice
1/4 c. bread crumbs
3/4 teaspoon salt

Saute/fry grated onion in butter, stir in flour till smooth, gradually add in lowfat milk.
