Chicken Stroganoff

   Preheat Oven to 425.

   Clean chicken breasts, season generously with Adobo (con pimento) and cracked black pepper. Pour 1t of olive oil in the bottom of a baking dish and place the chicken in there to bake for about 20 mins.

   While baking, slice the mushrooms and onions. In a skillet, over med-high heat. Place 1T. olive oil with the onions and mushrooms. Add thyme. Stir until they start get color. Remove from heat.

   When the chicken is cooked through, slice each breast and place in the skillet with the onion and mushroom mixture. Stir in the sour cream, salt, pepper (generously) and parsley and serve.
