Chicken Spaghetti – a delicious recipe with stewing chicken, Ro-Tel tomatoes, Velveeta cheese, onion, chicken, spaghetti. Easy to follow and perfect for any occasion.

1 stewing chicken, skinned
1 can Ro-Tel tomatoes, diced
1 lb. Velveeta cheese
1 medium onion
3 chicken bouillon cubes
1 (16 oz.) pkg. spaghetti
1 medium green pepper, chopped
1 can mushrooms
1 clove garlic
salt
pepper

In a large kettle, cover chicken with water and boil until done.

Do not drain!!

Take chicken out and cool until you can handle it and tear into small pieces.

Save broth!! Put 2 cups chicken broth in a pan and add cheese and melt, then add Ro-Tel tomatoes.

Cook spaghetti in rest of chicken broth.

Saute onions, green pepper, mushrooms, small amount of margarine and seasonings.
