1 lg. hen, cut up
1 pound sausage, sliced
4 tbsp. oil
4 tbsp. flour
1 lg. onion
1 bell pepper
2 stalks celery
1 clove garlic, crushed
2 doz. oysters (opt.)
1 teaspoon thyme
1 teaspoon sage
Salt & pepper to taste
2 quarts. water or possibly more
1 tbsp. file
1/4 c. minced parsley

Fry chicken pcs in oil and drain.

Brown sausage and drain.

Save 4 Tbsp.

of oil and brown flour.

Add in water slowly over low heat so it doesn't flame up.

Add in chicken, sausage, minced vegetables and seasonings.

Save oysters and file.

Simmer till chicken is tender.

Add in oysters and liquid and cook till they curl.

Add in file when pot is removed from fire.

Serve in large bowls with fluffy rice piled up in the center.
