Start by grating carrots in a food processor.

Put the carrots in a large bowl.

Add the chopped green onions to the carrots.

Next combine the garlic, ginger, pepper, soy sauce, and chicken in the food processor and pulse several times.

The mixture should look pasty (like the inside of a raw sausage).

Add the chicken mixture to the green onion and carrot mixture.

Mix it all up really well!

Now for the tedious part...

I usually set up a work station on the coffee table and turn on a movie while I assemble the dumplings.

Work station should include: chicken mixture, spoon, wonton wrappers, a cup of water, large cutting board or platter.

Take a single wonton wrapper in your hand.

Dip your free hand in the water and wet entirely one side of the wrapper.

Put a small spoonful of chicken mixture in the middle of the wrapper.

Fold the bottom corner of the wrapper to meet the top corner.

Pinch the edges all around to seal the triangle shaped dumpling.

Place it on the board and do another!

The first few will be the hardest until you can gauge how much filling to use so that you can still seal up the wonton package without the filling squeezing out.

Once all the wonton wrappers, or the chicken mixture is used up, youre ready to cook!

Heat up a large skillet with about 1 inch of water.

Put in a layer of dumplings and cover.

Cook for about 3-4 minutes.

Careful not to rip the skins, use a spoon to flip all the dumplings.

Cover and cook the second side 3-4 minutes until the dumplings are solid all the way through.

Transfer the cooked dumplings to a pot on the stove or a greased pan in the oven to keep warm.

Do another batch!

Any time your water level gets low, just add more Repeat until all the dumplings are cooked.

Serve with your favorite sweet stir fry sauce for dipping!
