In a bowl, combine ground chicken, mayo, salt and pepper.

Form into 2 or 3 large patties.

Preheat a skillet to medium-high heat and add olive oil.

Place chicken patties in skillet and cook for about 5 minutes on first side.

Flip and continue to cook another 23 minutes.

Remove patties from skillet and set aside.

In same skillet, melt butter.

Add carrot, celery, onion, peas, salt and pepper.

Saute until veggies have softened, about 7 minutes.

Next, sprinkle flour and cook for another minute.

Pour chicken stock into skillet and stir until thickened, about 45 minutes.

Once thick, remove skillet from heat.

To make burgers, preheat broiler.

Place bottom of brioche bun on a baking sheet.

Top bottom bun with chicken patty and spoon carrot-pea mixture on top.

Sprinkle some mozzarella on the gravy.

Repeat process with remaining burgers.

Place baking sheet under broiler for a few minutes or until cheese is nice and golden brown.

Add top brioche bun and serve immediately!
