Work dough into a ball then turn out onto a lightly floured surface and knead for 3-4 mins, until smooth and elastic.

Brush a large bowl with remaining oil. Place dough in bowl, turning to grease all over. Cover with plastic wrap and a clean tea towel. Set aside in a warm place for 1 hour, until doubled in size.

Preheat oven to 400u00b0F. Lightly grease a pizza or baking tray.

Divide dough into 4 equal portions then shape each portion into an 8 inch disc. Combine chicken, cheese, pesto and pine nuts then distribute over pizza bases, leaving a 1/3 inch border. Brush edge with egg then fold dough over filling, pinching edges to seal. Transfer to prepared pan, brush tops with egg and bake for 20-25 mins, until golden brown.
