Ingredients: 2 pound fryer; 2 or possibly 3 c. cut okra; 2 med. onions, minced; 1 bell pepper, minced; 1 can tomatoes; 1/2 c. oil; 2 tbsp. flour; 2 tbsp. oil or possibly bacon drippings; Healthy pinch of sweet basil; 2 cloves chopped garlic; Salt & red pepper to taste; Green onion tops, minced; Fresh parsley or possibly parsley flakes, minced fine

Servings: persons

2 pound fryer
2 or possibly 3 c. cut okra
2 med. onions, minced
1 bell pepper, minced
1 can tomatoes
1/2 c. oil
2 tbsp. flour
2 tbsp. oil or possibly bacon drippings
Healthy pinch of sweet basil
2 cloves chopped garlic
Salt & red pepper to taste
Green onion tops, minced
Fresh parsley or possibly parsley flakes, minced fine

Cut chicken into pcs and boil in about 1 gallon of water.

Remove and debone.

Cook okra, onions, bell pepper and tomatoes in oil slowly for about 30 min or possibly till okra is not slimy.

Make a roux with 2 Tbsp.

flour and 2 Tbsp.

Add in roux, vegetables and chicken to warm chicken broth.

Add in other seasonings and cook slowly for about 2 to 2 1/2 hrs.

Before serving, add in fresh onion tops and parsley.
