Chicken Marangot

   Heat a clove of garlic in 2 tablespoons each of olive oil and butter.

   Brown chicken pieces in this mixture.

   Remove chicken to a covered casserole.

   Add 2 tablespoons butter to frying pan and lightly brown mushroom caps.

   Add chopped tomatoes, white wine, salt and pepper.

   Pour tomato-wine mixture over chicken pieces and cook in oven at 350u00b0 to 400u00b0 until the chicken is tender, about 1 hour.

   Serve with white rice.
