Ingredients: 500 grams chicken liver; 250 grams smoked bacon; 1/2 onion; 1 clove garlic; 2 bay leaves; 1 tsp chilli flakes; 125 ml double thick cream; 50 grams tomato paste; 50 ml white wine; 5 black pepper corns; 1 tsp salt; 1 tbsp duck fat; 2 tbsp olive oil

500 grams chicken liver
250 grams smoked bacon
1/2 onion
1 clove garlic
2 bay leaves
1 tsp chilli flakes
125 ml double thick cream
50 grams tomato paste
50 ml white wine
5 black pepper corns
1 tsp salt
1 tbsp duck fat
2 tbsp olive oil

Saute onion, garlic, chilli, bay leaves and pepper corns in olive oil and duck fat over medium heat.

Add bacon, brown, then add white wine.

Add tomato paste and simmer for roughly 5 minutes or till tomato paste has cooked through.

Add chicken livers, simmer for a further 10 minutes.

Add cream and salt to taste.

Simmer till liver has cooked through.

Serve with freshly cooked pasta of your choice, garnish with fresh parsley.
