Cut chicken into thin cutlets.

Soak in milk for 10 minutes. Mix bread crumbs, parsley and Parmesan cheese.

Cover each slice of cutlet with bread crumbs.

Add olive oil to large frying pan and brown cutlets (quickly).

Place cutlets in a lightly buttered dish, salt and pepper to taste.

Place one slice of lemon on each cutlet.

Remove all but 1 tablespoon of oil from frying pan, leave residue from chicken.

Add wine and lemon juice and chicken broth to skillet.

Boil slowly until liquid is reduced by 1/2 and pour over the chicken slices.
