1 each eggs
1 tablespoon water
2 each chicken breast halves, boneless, skinless
⅓ cup flour, all-purpose
1 x salt
1 x black pepper
3 tablespoons olive oil
1 Package spinach frozen, chopped, thawed and well drained
1 teaspoon nutmeg ground
4 Teaspoons dijon mustard

Thaw pastry sheets at room temperature 30 minutes.

Mix egg and water.

Set aside.

Preheat oven to 400?F.

Between 2 sheets of waxed paper pound chicken to 1/4 inch thickness.

Cut breast halves in half.
