2 cups home fries or 2 cups hash browns
1 teaspoon fajita seasoning mix
1 small bell pepper
1 small onion
4 eggs
1/4 cup half-and-half
1/2 cup shredded cheddar cheese
1/2 cup fat free sour cream
1 teaspoon salt and pepper

Rub chicken breast with fajita seasoning and let marinade for 1/2 hour.
