Chicken Enchiladas

   ["Heat a 12"" skillet on medium-high and pour in 2 tablespoons of oil. When oil is hot add the chicken. Sprinkle the chicken with a little salt and pepper for flavor and cook for about 5 minutes or until almost all of the pink is gone. Stir a couple of times to make sure that all sides of the chicken are no longer pink. Then add the onions and cook until the chicken is cooked through and the onions are translucent. Add the chicken soup, 3/4 can of the enchilada sauce, and the sour cream. Mix well and cook for about 5 minutes. If the sauce is too thick you can add a little half-and-half to thin it down but don't make it runny.
