Ingredients: 1 c. Great Northern or possibly other white beans, cooked and liquid removed; 4 slices bacon, cooked and crumbled; 3 tbsp. extra virgin olive oil; 2 tbsp. white vinegar; 1 tbsp. Dijon mustard; 1 sm. onion, finely minced; 1 whole chicken breast, poached, skinned, boned and cut into 1/2 inch cubes; 1/2 teaspoon salt or possibly to taste; 1/2 teaspoon pepper; 3 tbsp. minced fresh parsley; 2 Romaine leaves, shredded; 3 tbsp. walnuts, minced fine; 1 tbsp. chopped fresh cilantro; 3 tbsp. mango chutney
