Chicken & Cabbage with Tomatoes

   Cut the chicken and the cabbage into bite-sized pieces.

   I also used 1 small eggplant.

   Heat olive oil in a pot.

   Lightly cook the surfaces of the chicken.

   Add the cabbage and the ingredients.

   Cover with a lid and steam.

   Remove the lid after 1-2 minutes.

   The chicken and the vegetables should be pretty much cooked through.

   I recommend using an Italian brand of canned tomatoes.

    Add the tomatoes and the ingredients.

    Cover with the lid again and simmer for 5 minutes.

    Season with and it's done.

    Serve on a dish and, if you have it, garnish with basil.
