Ingredients: 8 boneless, skinless chicken breast; 2 ripe whole tomatoes, diced; 4 tbsp. butter; 4 tbsp. oil; 1/2 c. white wine; 1/2 c. chicken stock; 1/2 pound fresh Mozzarella, sliced; 3 tbsp. onion, diced; 2 tbsp. fresh basil; 2 tbsp. fresh garlic, chopped; Salt & pepper to taste

8 boneless, skinless chicken breast
2 ripe whole tomatoes, diced
4 tbsp. butter
4 tbsp. oil
1/2 c. white wine
1/2 c. chicken stock
1/2 pound fresh Mozzarella, sliced
3 tbsp. onion, diced
2 tbsp. fresh basil
2 tbsp. fresh garlic, chopped
Salt & pepper to taste

Heat oil in large skillet, flour chicken lightly on both sides.

Brown for 3 min on each side on high heat.

Throw away oil, add in butter, onions, garlic and saute/fry till onions are transparent.

Add in diced tomato, spices and white wine.

Reduce then add in chicken stock.

Top with fresh Mozzarella.

Reduce sauce.
