2 tablespoons butter
2 tablespoons oil
3 tablespoons flour
2 cups broth
1/2 cup burgundy
1/4 pound mushrooms sauteed
onions 2 med.
1 pinch seeds red pepper
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup water
1 cup cooked white rice

Brown chicken in butter and oil.

Remove from oil, set aside.

Add flour and drippings and blend well.

Pour in broth and wine and cook, stirring until mixture boils and thickens.

Add mushrooms and onions, red pepper, salt and pepper.

Return chicken to sauce, cover and simmer for 45 minutes or until tender, basting occasionally.
