(4 ounce.) Swiss cheese, shredded; Avocado slices; Tomato wedges

5 chicken breasts, skinned, boned & halved (10 pcs)

1 c. fine bread crumbs
1/4 c. veg. oil
3 tbsp. butter
1/4 c. flour
1/2 teaspoon salt
1/8 teaspoon pepper
2 c. lowfat milk
1/2 c. dry white wine
1 c. (4 ounce.) Swiss cheese, shredded
Avocado slices
Tomato wedges

Place chicken breasts between two pcs of waxed paper and lb.

Dip chicken in egg and then in crumbs.

oil in skillet and brown chicken, a few pcs at a time, approximately 2 min on each side.

In a saucepan, heat butter.

Pour about 1/2 of sauce in bottom of a large baking dish.

Cover and refrigerateovernight.

Bake covered at 350 degrees for 50 to 60 min.

Remove from oven and sprinkle with cheese.

Return to oven till cheese is melted.

To make cherry sauce: Mix cornstarch and wine.

Bring cherry juice to boil and slowly add in wine mix.

Cook till thick and clear, stirring constantly.

Add in cherries.

Add in red food coloring, if you like.
