Ingredients: 1 (2 lb.) broiler; 3 tbsp. extra virgin olive oil; 4 cloves of garlic, chopped; Salt to taste; Healthy pinch of crumbled oregano; 2 leaves of basil, crushed; 3/4 of (#2) can of solid packed tomatoes, mashed; 1/4 c. sherry; 1 tbsp. parsley, chopped; 1 (4 ounce.) can button mushrooms or possibly 1 c. sliced mushrooms; 2 tbsp. shortening

Servings: persons

1 (2 lb.) broiler
3 tbsp. extra virgin olive oil
4 cloves of garlic, chopped
Salt to taste
Healthy pinch of crumbled oregano
2 leaves of basil, crushed
3/4 of (#2) can of solid packed tomatoes, mashed
1/4 c. sherry
1 tbsp. parsley, chopped
1 (4 ounce.) can button mushrooms or possibly 1 c. sliced mushrooms
2 tbsp. shortening

Disjoint broiler.

Heat extra virgin olive oil in a deep frying pan.

Add in chicken, seasonings with chopped garlic, salt, pepper, oregano and basil.

Brown chicken on both sides.

Add in tomatoes; cover and cook till barely tender.

In separate pan, saute/fry mushrooms in shortening and add in to chicken.

Cover and cook for 15 min.

Remove cover and add in sherry; cooking uncovered for 10 min and sprinkle with parsley.
