Chestnut Cream

   Boil frozen chestnuts in a large amount of water for 15 minutes.

   Drain and finely grind in the blender or food processor.

   Then, to get a really fine texture, pass the puree through a sieve.

   Scrape the vanilla bean.

   Pour the sugar and water into a large cooking pot and cook over high heat until large bubbles cover the surface.

   Then add the mashed chestnuts and the scraped vanilla bean.

   Lower the heat and cook for 30-35 minutes, stirring constantly.

   Attention to boiling splashing.

   Pour into a sterilized jar immediately, tighten the lid, and turn the jar upside down until completely cooled.
