In a pan add the cherries and water heat until the cherries are starting to break down about 5 to 10 mins.

Place the cherries in a muslin cloth and let the juice drain through collecting in a jug you will probably need to squeeze the cherries to get all the juice out.

Add the collected cherry juice back into the pan and discard the pulp. Also into the pan add the lime juice, honey and vanilla and gently heat until the juice becomes thick and syrupy about 5 mins. Leave the syrup to cool and then pour into a sterilised bottle.

To assemble the float first fill about just under a third of a glass with the cherry syrup then top up with soda and finish with a scoop of vanilla ice cream enjoy immediately.
