Ingredients: 2 lbs extra lean ground beef; 3 garlic cloves, minced; 2 medium onions, chopped; 2 celery ribs, chopped; 1 (15 ounce) can tomato sauce; 1 (19 ounce) can diced tomatoes; 1 (10 ounce) can sliced mushrooms, with juice; 1 teaspoon oregano; 1 teaspoon basil; salt and pepper; 5 cups rotini pasta (or any large shaped pasta); 2 cups nonfat sour cream; 2 cups low-fat cheddar cheese, grated; 2 cups lowfat mozzarella cheese, grated

In a large skillet, combine beef, garlic and onions.

Over medium heat, cook and stir until beef is lightly browned.

Drain fat if necessary.

Add celery, tomato sauce, tomatoes, mushrooms with juice, oregano, basil, salt and pepper.

Bring to a boil, reduce heat and simmer 20 minutes.

Cook pasta and drain.

Preheat oven to 350F.

In a 4 quart casserole (or larger) casserole, layer 1/2 the pasta.

Top with 1/2 of the meat sauce, 1/2 of the sour cream and 1/2 of the cheddar.

Repeat layers and top with mozzarella cheese.

Cover and bake for 45 minutes.

Remove cover and continue to bake until cheese has melted, about 10 minutes.
